Chocolate Zucchini Bread
Quick breads are very easy to make and bake very well in a solar oven. Chocolate Zucchini Bread has a moist texture and a rich chocolaty flavor. I used small mini bundt pans to make individual sized portions.
Chocolate Zucchini Bread
- 1/2 cup margarine
- 1/2 cup oil
- 1 3/4 cups sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 tsp vanilla
- 1 1/2 cups flour
- 4 TBS cocoa
- 1/2 tsp baking powder
- 1 tsp baking soda
- 2 c zucchini, shredded
- 1 cup chocolate chips.
Pre-heat solar oven while preparing recipe.
Cream margarine, oil, and sugar, Add eggs, buttermilk, and vanilla. Stir together. Mix in flour, cocoa, baking powder, and baking soda. Add the shredded zucchini and chocolate chips. Pour into baking pan or small bundt pans. Bake uncovered in hot solar oven for 2 1/2 to 3 hours. (In conventional oven, pour int 9x13x13 pan, and bake about 40 – 45 minutes at 325 degrees.)

Yes, a cream cheese frosting goes very nicely. UMMH
